I like treats that mix business with pleasure... healthful apples and an indulgent dip. Quick FHE snack.
(Disclaimer: Ok, there isn't really any caramel in this, but it ends up with a similar colour and taste to caramel. Joe says it would make a good middle layer for a cake. A good dense nutty or coconut cake...mmm!)
1 8oz (250g) pkg Cream Cheese
1 c. Brown Sugar
1 - 2 Skor Chocolate Bars, smashed into little pieces (or 1/2 c. of chopped walnuts or pecans)
4-5 Apples, thinly sliced (I like Granny Smith)
Blend cream cheese and brown sugar until smooth and sugar is dissolved (I used my hand/wand blender). Stir in chocolate bar pieces (or nuts). If needed, firm up the dip in the fridge before serving. Serve with thinly sliced apples.

Kerra's Hamburger Soup
Ingredients:
1.5 lbs Ground Beef
2 c. Potatoes, cubed
3 Carrots, diced
3/4 c. Celery, diced
2 medium Onions, diced
1.5 quarts water
2 large cans Tomatoes & juice (cut whole tomatoes if not using diced)
2 Tbsp Green Peppers, minced
2 Tbsp Parsley, minced
1 tsp Sugar
1 clove Garlic
1 tsp Worcestershire Sauce
1/2 tsp Salt
1/4 tsp Pepper
allspice
1 large bay leaf
1/4 c. raw Rice or Barley
Brown ground beef in large skillet. Drain off grease.
Add everything else and bring to a boil.
Reduce heat and simmer for several hours.
(You can do this recipe in a slow cooker, just brown the beef before adding it with the rest of the ingredients to your slow cooker.)
